I tried making a baked dish using oats and lentils, and there was only one little being that appreciated it - our dog Rio. In my opinion his opinion is the only one that matters. I was also happy there was a healthy treat he did indeed like and thought to share it.

Lentil Banana Oat Bake


Ingredients

  • 1 cup lentils

  • 1 large ripe banana

  • 3 dates (pitted)

  • 1 cup oats

  • 1 cup non-dairy milk (plus more if needed)

  • 1 tablespoon baking powder

  • Optional: fresh fruit for topping


Instructions


  1. Preheat the oven to 350°F. Lightly grease a baking dish or line with parchment paper.

  2. Soak the lentils. Place 1 cup lentils in a bowl and cover with boiling water. Let soak for 15 minutes, then drain well.

  3. Blend the mixture. Add soaked lentils, banana, dates, oats, 1 cup non-dairy milk, and baking powder to a blender. Blend until smooth. If the batter is too thick, add a little more non-dairy milk until it reaches a thick but pourable consistency.

  4. Pour into baking dish. Spread the batter evenly into the prepared dish. If desired, add fresh fruit on top.

  5. Bake for 40 minutes, or until the top is set and a toothpick inserted in the center comes out mostly clean.

  6. Let cool slightly before slicing and serving.
