Many vegan dishes can taste just like meat and that is where Chicken of the Woods comes in. Chicken of the Woods is actually Laetiporus sulphureus a type of mushroom. It can be yellow or orange and grows on tree trunks and is common throughout the world. It is also nutritionally dense and protein packed. Research has also shown them to be antioxidant, antibacterial, and anticancer. Here is a recipe below. Be sure to cook the mushroom thoroughly. Golden Pan-Pressed Chicken of the Woods (2-Ingredient Base) Ingredients

  • Chicken of the Woods mushrooms (1–2 cups, sliced)

  • Olive oil or avocado oil

  • Salt (to finish)


Instructions

  1. Slice & preheat: Slice mushrooms into flat, palm-sized pieces.Heat a pan over medium with just enough oil to lightly coat the surface.

  2. Press don’t stir: Place mushrooms in a single layer. Use a spatula to press them flat against the pan and leave them alone for 4–5 minutes.

  3. Flip once: Flip each piece once and press again. Cook another 3–4 minutes until both sides are deeply golden.

  4. Salt after cooking: Remove from heat and sprinkle with salt after cooking (this keeps them crisp and prevents sogginess)
